Cocktail Syrups

What is a cocktail syrup?

A cocktail syrup is a clear flavour concentrate made by cooking sugar, water and flavour components to a set density and stabilising them. It blends into cold drinks in seconds, leaves no sediment and can be dosed with a pump, so every glass tastes the same even when the bar team changes. Saphori cocktail syrups come in 700 ml bar bottles; with measured dosing, one bottle yields around 23 drinks. For definitions, types and production, see what is cocktail syrup.

Which syrup for which drink?

The range covers three jobs. Bar bases build the skeleton of a recipe: mojito (garden mint), lime, sweet & sour, blue curaçao, cucumber, berry hibiscus and cool lime. Fruit profiles set the character: passion fruit, peach, pomegranate, raspberry, blueberry, pineapple, coconut and dragon fruit. Sweet profiles add body to milk- and coffee-based recipes: Italian caramel, cotton candy and speculoos.

How many ml per drink?

Starting points for standard 250–400 ml serving glasses:

  • Mocktails (soda or tonic based): 20–25 ml
  • Milk coffees, lattes and frappés: 10–15 ml
  • Milkshakes: 20–30 ml
  • Pitcher lemonade: 1 part syrup to 8 parts liquid — roughly 110–125 ml per litre

These are starting values, adjusted for glass size, ice ratio and target flavour. The full table is in our syrup dosing guide.

Alcoholic and non-alcoholic recipes

The same syrup works in classic cocktails and in alcohol-free mocktails; only the base drink changes. It suits shaken, muddled and built techniques alike. For venues building an alcohol-free menu, our 10 mocktail recipes are a ready starting set.
