Fruit Purees
What is a fruit puree?
A fruit puree is a dense product made by crushing and refining ripe fruit, sieving where needed, and stabilising it by heat treatment. Its defining feature is high fruit content — Saphori purees contain more than 80% fruit. Unlike a syrup, it gives a drink not only flavour but body and texture. It comes in a 1.1 kg professional pack; one pack yields around 30 servings.
Puree or syrup?
Three things separate them. Fruit content: fruit is the main ingredient of a puree, while in a syrup it is limited to carrying flavour. Texture: puree adds body; syrup adds taste without clouding the drink. Use: syrup blends into cold coffee and soda in seconds; puree wins in smoothies, frozen cocktails and dessert layers. Most venues use both — see fruit puree vs syrup.
Where is fruit puree used?
- Smoothies and frozen cocktails — blended with ice, the puree builds the body
- Bar recipes — passion fruit, mango and red-fruit profiles form the base of shaken drinks
- Dessert plating — cheesecake sauce, panna cotta and dense fruit layers on desserts
- Lemonade and iced tea — real fruit texture in pitcher preparation
- Milkshakes and frappés — used alongside milkshake & frappé powders
More applications are covered in where to use fruit puree in cafés, bars and patisseries.
