What does a coffee syrup do?

A coffee syrup replaces sugar in espresso and filter coffee recipes while carrying the flavour with it. Unlike sugar it does not sink to the bottom, it does not clump in hot milk, and because it is pump-dosed the same latte tastes the same at every service. Saphori coffee syrups come in 700 ml bar bottles; at 10–15 ml per drink, one bottle yields around 23 drinks.

How to use coffee syrup

Syrup always goes into the cup before the milk. In hot drinks it is poured over the espresso and stirred, then the milk is added; in cold drinks, adding it before the ice makes mixing easier. A dosing pump fitted to the bottle is the most practical way to keep consistency during rush hours. In milk drinks the dose stays low, because milk already carries natural sweetness and the syrup should not mask the body of the espresso. Exact values are in our syrup dosing guide.

Which flavour for which coffee?

  • Latte and cappuccino — vanilla, caramel, hazelnut and soft hazelnut; a round finish in milk
  • Flat white and cortado — Italian caramel and toffee nut; balances espresso bitterness
  • Iced coffee and cold brew — vanilla, chocolate, cookie and speculoos; compensates for flavour loss when cold
  • Frappé and coffee milkshakes — chocolate, caramel and cotton candy; dose one step higher because ice cream and milk absorb flavour
  • Americano and filter coffee — cinnamon, chai tea and gingerbread; seasonal character for black coffee

Sugar-free coffee syrups

For menus that want flavour without calories, the sugar-free series offers vanilla, caramel and hazelnut. It is used at the same dose in hot and cold coffee recipes.

Building a seasonal coffee menu

Coffee shops, café chains and hotel lobby bars usually build seasonal menus on three or four flavours: one classic (vanilla or caramel), one nut (hazelnut), one sweet profile (chocolate or speculoos) and one seasonal signature (cinnamon, cotton candy or gingerbread). Because the same syrup behaves differently hot and cold, four flavours can carry a ten-item menu.

Frequently asked questions

Is coffee syrup the same product as cocktail syrup?

The production logic is the same; the flavour profiles differ. The coffee range focuses on profiles that work with milk and espresso, while cocktail syrups target soda, tonic and fruit-based recipes. Many venues use both.

Does it clump in hot milk?

No. As a clear concentrate it blends smoothly into hot and cold milk.

Is there a small size for testing?

Yes, 250 ml trial sets are designed for menu testing.
